"Best Ever" Baked Oatmeal - How Sweet Eats | Easy Breakfast Recipe

Hi lovely reader! I wanted to share an easy breakfast recipe that I found on Instagram by Jessica Merchant of @howsweeteats . It's delicious (tastes like a dessert), simple, and a great make ahead breakfast option for mornings on the go (or when you can't be bothered to actually make something...hello microwave). I have copied the recipe below but you can also find it on Jessica's blog "How Sweet Eats" .


Ingredients

  • 4 1/2 cups quick oats
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 cups milk whatever you like! dairy or nondairy
  • 3/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 1/4 cup chocolate chips
  • 1/3 cup sliced almonds
  • 1/3 cup flaked coconut toasted if you've like!
  • 2 tablespoons hemp hearts
  • 1 tablespoon chia seeds
  • milk or cream for drizzling (I like to pair mine with vanilla or coconut greek yogurt)

Instructions 
  • Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
  • In a large bowl, whisk together the oats, sugar, baking powder and salt. In a smaller bowl, whisk together the eggs, milk, oil and vanilla extract. Add the wet ingredients to the dry and stir until combined. Pour the mixture in the dish.
  • Bake for 35 to 40 minutes, or until the top is golden brown and set. Remove the dish from the oven and place the chocolate chips on top right away (so they kind of melt!). Top with the coconut, almonds, hemp hearts and chia seeds. Let cool slightly, then cut into squares and serve with a drizzle of milk or cream.
  • *After the dish has cooled completely, I cut them into squares, wrap in cling wrap individually to help keep them fresh, and put them in a ziplock bag to freeze. Then in the morning you can just grab a square and microwave it for a minute or two!

All Things October | iPhone Snaps

Hi lovely reader! Here is a quick round-up of some of the things I got up to in the month of October!

Breakfast in bed. Tried the omelette in a mug "hack" and I must say I was quite impressed.

As seen on Instagram. Originally asked my Mom what she would caption this pic, her response, "I'm nuts about these boots"....clever lady she is.

Gameday. This was about 1/3 of the tailgating spread. Amazing.

Pumpkin carving is no joke. This guy gave me a workout!

Other little pumpkin friend. This one was my favorite. 

Prepping for all the trick-or-treaters! And saving some for later...


Ended October by celebrating my friends birthday on a rooftop. The weather was perfect and so were the cupcakes.

More Monochrome & Some Spring Things | iPhone Snaps

Hello lovely reader! I hope you are doing well and that spring is in full swing where you are. Where I am spring is being quite the little tease showing itself and then deciding to be absolutely frigid. I am so tired of being cold ready and ready for some consistently warm weather. I wanted to do a set of iPhone snaps to share some insight into what I've been up to. I've also noticed that the majority of the pictures I take and want to share are of food so I apologize in advance if you're hungry, maybe iPhone food snaps should just be it's own type of post.

As you can probably tell I am loving the marble trend that seems to be everywhere right now from tables to laptop cases to jewelry, it is quite satisfying for all my fellow monochrome lovers out there.



When in doubt buy yourself flowers. My roommate and I picked these up at the store to freshen up the apartment and bring some spring to where it was lacking. 




Child at heart. You're never too old for a good pair of Disney princess pajamas. My personal favorite princess has always been Belle. Who was yours?

More marble and monochrome. Like I said, I don't mess around when it comes to a good black-and-white print.



Breakfast in bed on a Saturday morning. My go to breakfast during the week is a Light and Fit vanilla Greek yogurt with a bowl of either Cheerios or Kind granola, mixed with Craisins and diced dried apricots.



And now here's your warning that we are moving into the food portion of the photos! 



Well cheese to the extreme. Tom and Chee is one is a new favorite of mine and every time I see this picture I crave it. They have many different kinds of grilled cheese from a classic and simple cheese with tomato soup to a Mac and cheese grilled cheese that looks fantastic. If you have one in your area I highly suggest it, a perfect reason to go out of the house on a rainy or chilly day and warm up. Also who else feels like grilled cheese and tomato soup makes you feel like a kid again. If you're too proud you can find some "grown up grilled cheeses" on the menu as well. 


A little slice of heaven. I got my dad a Tortuga rum cake as a joke gift after we had been to a restaurant and had the most amazing Rum baba dessert. However, I was highly impressed with how moist the cake actually was seeing as it was boxed. We were quite happy to find that after following the instructions on the box and popping the cake in the microwave, drizzling some caramel sauce on top, and pairing it with some vanillas ice cream that it was delicious! 



What matters in life is not how much candy you get on Easter but how much candy you get after raiding the post Easter clearance candy...

Everything October | iPhone Snaps

Hiya lovely reader! How has your October been? Mine has been autumnally festive and extremely busy. The leaves have changed, the days and nights are cooler, and my apartment is decked out with pumpkins and purple lights. Pumpkin spice cookies sit atop the counter and cozying up with a blanket at night has become a regular occurrence. Fall is here! 

First weekend of October = decoration shopping

Halloween snack cakes. My flatmate bought these and I hadn't had them in forever! Brought me back to grade school, where my best friend would have a snack cake for every single holiday. I was more of a "Cosmic Brownies" girl myself...

Omelette and toast on a Sunday morning.

All the candy corn. I'm actually not a fan of candy corn or pumpkins but my flatmates are and I like how they look so...

Felt very autumnal in my army green sweater, skinny jeans, and brown chelsea boots. 

Cozy morning called for toast with peach jelly, quiche, and a movie.

Fruit, Fireworks, and a Follow | iPhone Snaps

Hi lovely reader, I hope you are having a sunny Sunday! It is absolutely pouring here, perfect day to get stuff done though. I apologize for the lack of posts, I have been out of town for about two weeks straight, but I do have some travel diaries coming your way soon! For today, I've scrolled through my Camera Roll in order to put together an ever classic iPhone Snaps post! So here's some insight into what I've been up to!

Belgian Waffle, Fresh Strawberries, and Powdered Sugar. Both photogenic and delicious!

If I do say so myself, I believe that I was gifted with the ability to wrap presents. I know some people dread it but I love it! 

Woke up to this one morning and was a bit excited (understatement). Samantha, if you're reading this, thank you so much and lots of love! Xx (Congrats on Latitude)

We went to my aunt's house, where tank racing is not a past time, it is a lifestyle. It is taken seriously, so fun though.

I don't know how much of this kinda stuff I really believe in, but it is fun to "study your hand" and see if any of it matches up.

One of my co-workers love everything retro and is expecting a baby, so I got her this cute little picture frame and put an adorable little photo I found online.
